As you stroll through the historic town center, you'll discover traces of the medieval city, such as the parapet walk (les lices), the ancient red fortified brick walls and half-timbered houses (maison Roucariès). Also worth a visit is the Notre Dame church.

An ancient Gallo-Roman town, Caraman took its present form in the 11th century. The village was fortified in concentric circles around its castle, with gates, moats and lices. Salt and woad contributed to Caraman?s fortune. In the year 1000, the lords of Caraman taxed salt traffic between Béziers and Toulouse. In the 16th century, Caraman became a center for woad production. The county of Caraman was sold in 1670 to Pierre Paul Riquet, creator of the Canal du Midi.
